Fluffy whole wheat vegan pancakes

I am not vegan. But that does not mean that I cannot appreciate a good pancake when I sink my teeth into one. This recipe was inspired by my good friend T. She is vegan. She also happens to be tall, blond, slim and witty. Who knows, maybe eating more vegan would shake some of that fairy dust on me as well. These DO NOT taste like health food in any way, shape or form. They are as sinful as they come.

Fluffy Whole Wheat Vegan Pancakes

Ingredients

1/2 cup whole wheat flour
1/2 cup all-purpose flour
1 Tbsp baking powder
pinch of salt
1/4 cup brown sugar
1 Tbsp Canola oil
1 cup soy milk
1 tsp vanilla extract

Preparation:

1. In a mixing bowl, mix together the dry ingredients. Mix wet ingredients in a separate  bowl.

2. Add wet mix to the dry one and stir to combine. Do not over mix.

3. Heat a non stick pan on medium heat and lightly coat with oil spray. Pour spoonfuls of batter on the pan and form little circles. When bubbles start to appear on the surface, flip the pancakes and cook until golden.

This recipe yielded about 14 small fluffy pancakes that were served with honey and butter (sorry T).
