This recipe originates from Chef Michael Smith’s popular TV show “chef at home”. I was watching the chef do his magic while my Hungarian beef stew slowly simmered and immediately decided that these biscuits would make an excellent side dish (not to mention so much quicker to make then the original loaf of bread I had in mind).
Of course, I couldn’t help but tweak the original recipe. I substituted half the flour with whole wheat and a part of the heavy cream with a 10% half and half. The result? My husband’s boss asked for the recipe. Victory is mine. Next time I will try to replace the Cheddar by some Rosemary. Something tells me the flavors will work together great.
Whole wheat Cheddar biscuits
Ingredients:
1 cup all purpose flour
1 cup whole wheat flour
1 tbsp baking powder
1 tsp salt
1 cup grated cheddar cheese
1 cup heavy whipping cream (35% fat)
1/2 cup 10% cream
Preparation:
Preheat oven to 450 degrees F.
1. In a medium-sized bowl, whisk together the flour, baking powder and salt.
2. Add cheddar and stir.
3. Add cream and stir until the mixture just comes together.
4. Knead the dough a few times.
5. Pat the dough into a flat round about one inch thick and cut into eight wedges.
6. Place them on a baking sheet and bake for 12 to 15 minutes, until the tops are golden brown.
